Hope everyone enjoyed Memorial Day and remembered those that said goodbye to their family and friends so we'd have the right to go visit ours! :) The last few weeks, I've been on a muffin making kick. I'm all about homemade food, but I really love it when I find a loophole to all the work, like using my bread machine to do all the work for homemade bread and all I have to do is throw the dough it made into the oven. The other day, I was making a double batch of strawberry banana muffins and decided to experiement with freezing the batter the same way I do Story's baby food. Success! I made up the batter like normal, baked half of it then, and then poured the rest into ice cube trays. Once they were completely frozen, I dumped all the cubes into a ziploc bag and labelled it. Then, when I decided to bake those, I just put in as many as I wanted into a greased muffin pan and baked! They take a few minutes longer, of course, but they were perfect! This way, I can make one or a dozen! I plan on making up several different batters so that we have options to what we want in the mornings. Then, I can have my mocha muffins while others have blueberry or whatever. You should really try this out! They make a little bit smaller muffin than I'd normally pour, but I haven't tried stacking two cubes on each other to bake to make a bigger muffin.
